Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery, cooking until vegetables begin to soften, about 5 minutes.
  3. Stir in garlic, cabbage, and bell pepper, cooking for 5 more minutes.
  4. Pour in tomatoes, broth, thyme, and basil.
  5. Bring mixture to a boil, then reduce heat and simmer for 30 minutes.
  6. Season with salt and pepper.
  7. Garnish with fresh parsley before serving.
