Ingredients
- 1 pound 93% lean ground turkey
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 cups baby spinach
- 1 can (14.5 oz) diced tomatoes, no salt added
- 2 tablespoons fresh lemon juice
- 1 tablespoon Italian seasoning
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- Fresh basil leaves for garnish (optional)
Instructions
- Heat 1 tablespoon olive oil in large skillet over medium heat
- Add ground turkey, breaking into small pieces. Cook until no longer pink, about 7-8 minutes
- Remove turkey from skillet and set aside
- Add remaining olive oil to skillet. Sauté onion and garlic until softened, about 3 minutes
- Add bell peppers and cook 5 minutes
- Return turkey to skillet
- Add tomatoes, lemon juice, and seasonings. Simmer 5 minutes
- Stir in spinach until wilted
- Garnish with fresh basil
