I freeze the extras in portions. That way if I’m in a hurry or just not wanting to cook I have something ready in minutes.

I struggle with meal planning b/c I make all this food and then it turns my stomach and I can't eat it. For clarification, I am married but my husband drives a tractor-trailer over-the-road so I'm alone 99% of the time. I hate wasting food and I get angry with myself because I just can't eat what I've fixed.

I deal with portion size every now and then but I do meal prepping once a week so it helps out a lot with me and in my portion size it's hard but you can do it one day at a time
